Ingredients
- (Serves 4)
- 8 oz. tempeh, cubed
- 1/2 large onion, diced
- 1/2 bell pepper, diced
- 1 1/2 Tbsp. olive oil
- 1 heaping Tbsp. tomato paste
- 1/2 cup BBQ sauce
- 1/2 cup broth or water
- 1/3 cup cilantro
- Salt and pepper, to taste
- 4 hamburger buns
- 1 avocado, sliced and sprinkled with salt

Preparation
Step 1
Heat oil in large saute pan. Add onions, peppers and tempeh. Cook until browned and onions and peppers are tender, stirring occasionally. Season with salt and pepper.
Stir in tomato paste, and saute another minute. Add BBQ sauce and broth/water. Cook, stirring frequently, until mixture thickens but still remains saucy, adding more broth if needed. Add cilantro 1-2 minutes before removing from heat, cooking just until cilantro is wilted.
Spread both sides of bun with BBQ sauce, if desired. Add a heaping spoonful of tempeh. Top with avocado slices.
