Creamed Chipped Beef

Stouffer’s Creamed Chipped Beef was pretty good, but once I learned to make a bechamel sauce I realized I could make my own version. Of course you have to get the dried beef in the glass jar. I don’t know what it’s used for except creamed chipped beef and cheese balls.
I promise if you try this recipe on a cold winter’s night you will not regret it. Better than Stouffer’s. Most definitely.

Ingredients
- 1/4 cup butter
- 1/4 cup flour
- 1 dash pepper
- 2 cups milk
- 2 1/2 ounces dried beef, sliced

Step 1
In medium saucepan, melt butter. Blend in flour and pepper. Stir in milk. Cook over medium heat until mixture boils and thickens, stirring constantly. Reduce heat. Tear beef into shreds; add to cream sauce and heat through. Serve over toast points or mashed potatoes.

This was and still is the best military breakfast a person can have.
I have tried it once and it was great!
I use 1/2 cup of butter and brown the dried beef in it first. Then I sprinkle the flour over it and work it in. Then add the milk a little at a time. Pepper it and stir until it becomes thick. Serve over biscuits.
I love this meal! We have always added 2 chopped up hard boiled eggs in with the beef.
When I make cream dried beef, first I fry the dried beef in the butter then finish the recipe. Brings the flavor out..
Saute a 1/4 cup chopped onions in the butter before adding other ingredients and add just a dash of ground cloves just before serving. I have heard of just adding the beef to cream of mushroom soup - anyone tried that?
I love this stuff ! Mom made it all the time. But She use a whole gallon of milk. very fattening .....But O sooo good. She told me it was really called S.O.S!
When I make creamed beef, I rinse beef strips under hot water to remove excessive salt. I use kitchen shears to cut beef strips into bite-size pieces over colander. Then continue recipe. Sometimes I add frozen chopped onion that I saute in the butter or margarine. I have used hamburger meat and cream of mushroom soup and added small box of frozen peas in last 5 minutes of cooking. Excellent served over mashed potatoes, rice or steamed noodles. My husband was in USAF for over 30 years.
Best U.S.Marine Corps breakfast ever. Every now and then I'd skip chow but when word would come back that cream beef and hashbrowns were on the menu I'd head straight to the mess hall. I've been out for years and still reminisce about it.
Very good! Just like Mom made. Dad served in the army during the second world war and said it was a favorite meal of the troops. It was served on toast. They had a name for it - SOS. (S**t on a shingle)
Yep! this was a great meal when I was growing up....Grew up a Navy Brat and Bryan is correct about the military name. SOS!
I made this for my boyfriend and he loved it. Now were are going camping and bought enough to make for the whole gang as a surprise breakfast. This is a simply recipe and so easy to make.
6 years 5 months and 23 days in the 82nd airborne division and i never missed a meal when S.O.S. was on the menu. It was my favorite meal. I always went back for seconds or thirds or until they ran me out of the Mess Hall. now same 49 years later and I still love it.
Creamed Chip beef is also delicious and filling over a baked potato.
Was poor growing up so mom made this with summer sausage (in Dutch area). Very good and cheaper. Brown first!

Add a bit of ground nutmeg and you've got a real tasty meal bumped high.
I too remember this recipe my mom would fix..! Passed it down to our kids and learn to make it with scrambled eggs mixed in the sauce topped with some cheddar cheese... also would use tuna fish ! Just as delicious ! Thanks for sharing your memories... enjoyed reading them
SOS in a metal mess kit with powdered eggs while chowing down in a torrential downpour...nothing like it!
My mom made this for us 9 kids and Dad about once a week because it was cheap and it filled you up. She also called it SOS but I did not know that came from the military! Interesting!!! We had it for supper.
