Ingredients

  • 2 carrots
  • 2 stalks of celery
  • 1 onion
  • 2 cups green chile (roasted, peeled, seeded, and chopped)
  • 2 cups chopped tomatoes
  • 4 large potatoes cut into 1 inch cubes
  • 2 cups dried beans
  • Salt to taste

Preparation

Step 1

1. Wash the beans removing any chaff
2. Cover the cleaned beans in water and let sit for 4 to 6 hours
3. Drain beans
4. Chop the carrot, onion and celery into small pieces
5. Saute veggies in olive oil in a stew pot until onions are translucent.
6. Add the soaked beans, chiles, tomatoes and pinch of salt to the pot and top up with water of stock until beans are covered by 2-3" of liquid.
7. Bring to a boil and reduce heat to barely a simmer. Cook for 3 hours or until beans are tender. Add liquid as needed.
8. Add potatoes during last 30 minutes of cook time.
