Fresh Tomato Soup

This soup is beyond delicious, really!! You will be utterly surprised by how good and how easy it is to make. You can serve it two ways; in a grande soup bowl as an entree or mini glasses as a delicious appetizer.
Top it with avocado for a heartier version or just drizzle the top with olive oil and a sprinkling of chopped fresh chives for a lighter touch….either way you are in for a treat! This is what I’m talking about when I say ‘Fast foods that SERVE you” - quick and simple recipes that not only save you time in the kitchen but are super nutritious too! Ingredients
- Toppings:
- 2 cups chopped tomatoes – I use the juicier grape or cherry tomatoes for the best flavor
- 1/2 cup raw cashews
- 2 sun dried tomato slices packed in oil
- 1 1/2 cup water
- 2 cloves garlic
- 1 1/2 tsp sea salt
- fresh chopped chives
- extra virgin olive oil
- black pepper
- For a heartier version – top with small chunks of avocado

Preparation
Step 1
1. Throw everything together in the blender and blend away until thoroughly mixed and creamy – wasn’t that easy?!!!
2. Main course – pour into soup bowls
3. Appetizer – pour into small glasses half way.
4. Top with fresh chopped chives
5. Finish with a drizzle of olive oil and a twist of the black pepper mill.
