Caramelized Onion Toast

Ingredients
- 8 tablespoon unsalted butter
- 2 onions, sliced
- 12 anchovy fillets, chopped (optional)
- 2 teaspoons fresh thyme leaves
- kosher salt
- pepper
- 1 baguette
- 1/3 cup pitted Nicoise olives (optional)
- olive oil
- Parmigiano-Reggiano cheese

Step 1
Preheat the oven to 450 degrees.
Heat 4 tablespoons of the butter in a large skillet over medium heat. Add the onions, anchovies, thyme, salt and pepper and cook, stirring occasionally, until the onions are sweet and golden brown, about 20 minutes.
Meanwhile, with a serrated knife, shave off the rounded top and bottom of the baguette, then halve the baguette horizontally to make 2 long slices of bread. Brush both sides with the remaining 4 tablespoons of softened butter. Place the bread slices on a baking sheet and spread with the onion mixture. Dot with the olives and drizzle with olive oil. Put the baking sheet in the oven and bake until the bread is crispy, about 15 minutes. Use a vegetable peeler to shower the toasts with cheese shavings. Cut into pieces.
