Ingredients
- 1/2 C italian bread crumbs
- 1 chopped garlic clove
- 2/3 C grated cheese
- 2 T chopped fresh italian parsley
- 4 T olive oil
- salt/pepper
- 1 C dry white wine (or red)
- 3 1/4 C tomato gravy

Step 1
Stir the first 5 ingreds in med bowl til blended. Stir in 2 T of the oil. Season mixture w/ salt and pepper and set aside.
Sprinkle mixture evenly over thinly sliced flank steaks. Roll up steak pieces and tie.
Brown in 2 T oil in heavy ovenproof skillet. Add the wine to pan. Stir in red gravy. Cover partially w/ foil and bake til the meat is almost tender; turning and basting w/ the sauce every 30 mins. After one hour, uncover and continue baking til tender (about 30 mins longer) Total cooking time is about 1 1/2 hrs.
