Marinated onion rings
Great for summer potlucks - these can be prepared days ahead. I always double the recipe.

Ingredients
- 1 large Spanish onion
- Sliced in thin rings
- Cold water to cover
- 1 cup granulated sugar
- 1 cup vinegar
- 1 cup cold water
- 1 tbsp salad oil

Step 1
Slice peeled onion into almost the thinnest slices you can. A food slicer makes this a snap to do. Separate into rings and place in bowl. Cover with lots of water. Let stand for 1 hour.
In small saucepan, mix sugar, vinegar, water and oil. Heat and stir until sugar dissolves. Drain onions. Pour sugar-vinegar mixture over onions. Let stand in refrigerator, covered, for at least one day before serving. Serves 8 -10.
