Veggie Stove Top Mac-n-Cheese

A creamy mac n' cheese with the added benefit of vegetables.
Note - for toddler meals, spray a muffin pan with Pam, overfill each spot with mac n'cheese and freeze. After frozen, vaccuum seal for easy to pack meals!

Ingredients
- 1 box pasta (elbows or pin wheels)
- 1/4 olive oil
- 1/4 c flour
- 2 c milk
- 2 c puree butternut squash or cauliflower
- 1 tsp nutmeg or paprika (depends on the veggie)
- 1 tsp kosher salt
- black pepper
- 16 oz sharp cheddar,shredded

Preparation
Step 1
-in large pot of boiling water cook pasta to al dente and drain.
- heat oil in pan, whisk in flour to create rue
-add milk, bring to a boil and thicken
- add veggie, spice (n or p), salt, pepper
- add cheese, stirring to combine
- Stir into pasta
