Note - for toddler meals, spray a muffin pan with Pam, overfill each spot with mac n'cheese and freeze. After frozen, vaccuum seal for easy to pack meals!

Ingredients

  • 1 box pasta (elbows or pin wheels)
  • 1/4 olive oil
  • 1/4 c flour
  • 2 c milk
  • 2 c puree butternut squash or cauliflower
  • 1 tsp nutmeg or paprika (depends on the veggie)
  • 1 tsp kosher salt
  • black pepper
  • 16 oz sharp cheddar,shredded

Preparation

Step 1

-in large pot of boiling water cook pasta to al dente and drain.
- heat oil in pan, whisk in flour to create rue
-add milk, bring to a boil and thicken
- add veggie, spice (n or p), salt, pepper
- add cheese, stirring to combine
- Stir into pasta
