Ingredients

  • Wonton Cups:
  • Cooking Spray
  • 18 wonton wrappers
  • 2 t canola
  • 1/4 t salt
  • Dressing:
  • 2 T fresh lime juice
  • 1 t lime zest
  • 1/4 t salt
  • 1/8 t black pepper
  • 1/2 t red pepper flakes
  • 2 T olive oil
  • Salad:
  • 1/2 lb lump crab
  • 1 stalk celery, finely diced (1/4 c)
  • 1/2 c peeled, finely diced ripe mango
  • 1/4 c thinly sliced scallions (white & green)
  • 2 T coarsely chopped cilantro

Preparation

Step 1

Preheat oven to 375.
Wonton:
Brush both sides wonton with canola. Spray mini muffin tins. Press wontons into muffin tin to form cup shape. Sprinkle with salt. Bake til browned & crisp, 8-10 min. Cool; remove from tins.

Dressing:
Whisk together lime juice & zest, salt, pepper & red pepper. Add olive oil & whisk til well blended.

Salad:
In med bowl, gently toss together crab, celery, mango, scallions & cilantro. Add dressing & combine.

Fill each cup & serve immediately.
