Ingredients

  • 1 1/4 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 c cooking oats, uncooked
  • 1/3 c nonfat skim milk
  • 2/3 c unsweetened applesauce
  • 1/4 c brown sugar
  • 1/4 c molasses
  • 2 T canola oil
  • 1 large egg
  • 1 1/2 c grated carrots
  • 1/2 c diced prunes

Step 1

In a large bowl, mix flour, baking powder, baking soda, salt and cinnamon; stir in oats. In medium bowl with fork, mix milk, applesauce, brown sugar, molasses, oil and eggs. Stir in carrots and prunes. Then add applesauce mixture to the flour mixture, just until moistened. Spoon batter into greased muffin pans. Bake at 400 degrees for 23 to 25 minutes. Cool.
