Ingredients

  • 4 lbs. strawberries
  • 10 cups granulated sugar
  • 1/4 cup frozen concentrated apple juice
  • 2 tbsp lemon juice, fresh or bottled

Preparation

Step 1

Combine strawberries, sugar, apple juice and lemon juice in large pot. Stir over medium heat until sugar dissolves and it comes to a full rolling boil. Boil rapidly for about 20 minutes. Test a teaspoonful on a chilled sauce. It should firm up and form a light skin to be spreadable. Skim off foam. Pour into hot sterilized jars to within 1/4 inch of top.
