Ingredients

  • Topping:
  • 1 cup water
  • 1 cup molasses
  • 1 tsp baking soda
  • 1 cup brown sugar, packed
  • 1/2 cup butter, softened
  • 2 eggs, well beaten
  • 2 cups all purpose four
  • 1 Tblsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/3 cup all purpose flour
  • 1/3 cup sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 cup walnuts, chopped
  • 3 Tblsp butter
  • Glaze:
  • 1 cup powdered sugar
  • 1 1/2 Tbls milk
  • 1/2 tsp vanilla extract

Preparation

Step 1

Preheat oven to 350. Grease a 13"x9" baking pan. Bring water and molasses to a boil. Stir in baking soda. Let cool. Beat sugar, butter and eggs in a bowl. In another bowl, combine flour, baking powder, cinnamon, ginger and cloves. Beat flour alternately with molasses, half at a time, into butter mixture until well mixed. Pour into the prepared pan.

Make topping: Combine flour, sugar, cinnamon, ginger and walnuts in a bowl. Cut in butter with a pastry blender until mixture is coarsely crumbled. Sprinkle over gingerbread. Bake at 350 for 40 minutes.

Glaze: Whisk sugar, milk and vanilla in a small bowl until soft enough to drip from a spoon. If needed, add more milk. Drizzle over top of lukewarm cake.
