Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 2 tsp vanilla
  • 2 cups packed, finely shredded unpeeled zucchini
  • 3 1/4 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup chopped nuts
  • 1 cup raisins

Preparation

Step 1

Beat eggs well. Gradually beat in sugar, then oil and vanilla. Stir in zucchini. Mix together dry ingredients. Stir zucchini mixture along with raisins. Pour into 2 greased 8" x 4" loaf pans or spoon into muffin pans. Bake at 350 degrees for 50-60 minutes or until toothpick in centre comes out clean.
