Ingredients

  • 1 1/2 cups all-purpose flour
  • 2/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 cup blueberries
  • 1 tsp. lemon extract

Preparation

Step 1

1. Place all dry ingredients in a bowl; mix with a spoon.
2. Add egg, milk, oil and lemon extract. Fold in blueberries.
3. Fill greased muffin pan 2/3 full.
4. Bake at 400 degrees F. for 16-18 minutes. After baking, spread margarine on top of muffins; then sprinkle with sugar.
