  • 1 ½ cups freshly squeezed orange juice
  • 1 cup quick cooking rolled oats
  • ½ cup butter or margarine
  • ½ cup firmly packed brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1 ¾ c sifted flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ¼ tsp. cinnamon
  • 1 tbsp. grated orange rind
  • ½ cup chopped walnuts
  • Topping:
  • ½ cup firm packed brown sugar
  • ¼ cup butter or margarine
  • 1 tbsp. grated orange peel
  • 1 cup flaked coconut
  • ½ cup chopped nuts

Preparation

Step 1

Bring orange juice to a boil and pour over oats and set aside to cool. Cream shortening and sugar until light, add eggs vanilla, beat until well blended. Sift together flour, soda, baking powder, salt and cinnamon. Add alternately with oat mixture. Stir in grated orange peel and nuts. Pour into greased pan 9 X 13 and bake at 350deg. For 40 minutes.


Directions for Topping:

Boil and cook 1 minute, sugar butter, orange juice & peel (stirring constantly) add other ingredients. Spread over hot cake immediately. Place under broiler until bubbly (about 1 minute)
