Ingredients
- 4 boneless skinless chicken breast halves cut into "tenders"
- 2 cups cooked rice
- 1 cup chicken broth
- 1/2 cup chopped parsley
- 1 onion chopped
- 1 cup chopped celery
- 1/2 cup chopped mushrooms
- 2 cups chopped beefsteak tomatoes
- 2 cans chopped artichoke hearts
- 1 can olives
- Salt and pepper to taste

Step 1
Cook rice according to directions on package. Set aside. Place two chicken breasts, sliced, into two-2 quart casserole dishes. Divide remaining ingredients between the two casserole dishes. Gently stir each dish to evenly distribute the items.
Bake for about 35 minutes or until the chicken strips are done.
