Ingredients
- 2 large ripe tomatoes
- 1/2 cucumber, peeled and diced
- 2 ounces kalamata olives
- 1 large red onion, finely sliced
- 6 ounces feta cheese, crumbled
- Finely grated lemon zest
- 1/4 cup olive oil
- 1 teaspoon oregano, dried
- Salt, to taste
- Juice of 1/2 lemon

Preparation
Step 1
Cut tomatoes into thin wedges and place in a medium-sized bowl. Add cucumber and olives. Toss the salad with half of the feta. Scatter the remaining onions and feta over the top of the salad. Sprinkle the lemon zest and juice over the salad. Douse with the olive oil and season with the oregano and salt. Gently toss the salad once , just before serving.
