Ingredients

  • Sugar topping:
  • 28 oz. heavy cream
  • 1 tsp vanilla extract
  • 1/2 each vanilla bean, split
  • 4 ea. egg yolks
  • 1 lb sugar
  • 1 each creme brulee
  • 1 T granulated sugar
  • 1 ea strawberry
  • 1 tsp powdered sugar

Preparation

Step 1

In large pot putsheavy cream, vanilla extract and split vanilla bean. Bring to a simmer. Mix egg yolks and sugar in bowl with whisk. Slowly add hot cream to yolks. Whick to combine. Cool completely. Place 6 oz. of mixture into individual ramekins. Place ramekins in a large roasting pan. Add hot water to roasting pan, half way up sides of ramekins. Cover with plastic wrap. Bake at 250 degrees for 40-45 minutes. Rotate half way through baking time.

Spread sugar over top of creme brulee and melt with torch. Place ramekin on plate. Garnish with strawberry and powdered sugar.
