Ingredients

  • 3 -3 tsp olive oil, divided
  • 1 -1 cup ground almonds or other nuts
  • 3 -3 Tbs almond butter
  • 1/3 -1/3 cup egg whites
  • 1/2 -1/2 cup chopped onion
  • 2 -2 cloves minced garlic
  • 1 -1 chopped brocoli
  • 3 -3 zucchini
  • 1 -1 acorn squash
  • 1 -1 pack mushrooms
  • 1 -1 large chicken cut in 1/2" chunks
  • 1/2 -1/2 cup marinara sauce
  • 1/2 -1/2 tsp oregano
  • 1/2 -1/2 tsp red pepper flakes
  • And any other spices or veggies you want

Preparation

Step 1

Cut acorn squash, drizzle olive oil and bake 400 for 45-hour
Mix ground nuts, almond butter, and egg whites in a small bowl. Grease a pizza baking sheet or similar with 2 tsp of olive oil, then spread the "dough" mixture over it, making a 1/4" thick crust. Preheat the oven to 250 F. In a skillet, add the remaining olive oil and the chicken cook and then remove to a small bowl. Add the garlic, onions, brocoli, shrooms and zucchini to the skillet. Sauté the veggies.

Cover the dough with the marinara sauce, then add the meat and vegetables. Add the oregano and red pepper flakes and any other spice you want, then bake for 30 minutes. Remove from oven and serve! Use a large spatula to carefully remove the slices from the pan, as the nutty "dough" won't be as crisp as traditional grain dough. Makes 4 servings.
