Great soup, even better the next day! I like to crush the onion
soup mix because I don't like the dried onions floating in the broth!

Ingredients

  • 1 46-oz can chicken broth
  • 4 cups water
  • 2 cups V/8 Juice
  • 1 envelope Lipton Onion Soup Mix, crushed
  • 1 10-oz pkg frozen mixed vegetables OR
  • 1 can Veg-All
  • 1 cup uncooked pasta (diti is best, or small shells/orzo/elbows)
  • 1 lb ground beef

Preparation

Step 1

Brown ground beef in dutch oven and drain.
Add all remaining ingredients, except pasta, and bring to a boil.
Simmer, coverec, 45 minutes.
Cook pasta seprately and add to soup just before serving or add to individual bowls separately to keep pasta from soaking up the soup broth. Store leftover soup and pasta in separate containers.
