New York Strips with Gorgonzola Butter

Ingredients
- 2 tablespoons crumbled gorgonzola cheese or other blue cheese
- 2 tablespoons cream cheese spread with chives and onion
- 2 tablespoons butter, softened
- 1 tablespoon chopped pine nuts or walnuts, toasted*
- 4 boneless beef top loin (strip) steaks,
- cut 1 inch thick (about 3 pounds)

Preparation
Step 1
For Gorgonzola butter, in a sma11bow1 stir together Gorgonzola
cheese, cream cheese, butter, and nuts. Shape mixture into a
1-inch-diameter 1og. Wrap in plastic wrap and chil1 about 1 hour
or until firm.
Trim fat from steaks. Sprinkle steaks lightly with salt. For a
charcoal grii1, gril1 steaks on the rack of an uncovered gril1
directly over medium coals to deslred doneness, turning once
halfway through gri11ing. A11ow 10 to 1z minutes for medium
rare (145'F) or 12 to 15 minutes for medium (160F). (For a gas
grill, preheat grill. Reduce heat to medium. Place steaks on grill
rack over heat. Cover; grill as directed)
To serve, cut butter into eight slices. Place two slices on each
steak.
