Ingredients

  • 2 lbs flank steak
  • 3 T Taco seasoning mix
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 1 jalapeno pepper, chopped
  • 1/8 tsp cayenne pepper
  • 1 tsp salt
  • 1 cup tomato juice
  • 1 cup beef broth
  • 2 cans black beans
  • 1 8-oz can tomato sauce
  • 1 jar salsa

Step 1

Cut steak into 1 inch cubes and toss with taco seasoning. Flash freeze in single layer on parchment paper-lined cookie sheets. When frozen, combine with onion, garlic, jalapeno, cayenne, and salt in zip-lock bag. Pour tomato juice and broth into another bag. Seal bags, combine in larger bag, label, and freeze. Store beans, tomato sauce, and salsa in pantry.

To thaw and reheat: Thaw overnight in refrigerator. In the morning, place in slow cooker. Drain and rinse beans and place in slow cooker along with tomato sauce, salsa, and 1/2 cup water.

Cover and cook on low 8-9 hours. Remove about 1/3 of beans, mash, and return to pot. Cook an additional 20-30 minutes until thickened.
