Ingredients
- 4 cups sliced fresh or frozen rhubarb
- 1 1/2 cups sugar
- 1 1/2 cups water
- 1/8 tea. red food coloring, optional
- 1 pkg. (18 1/4 oz) butter pecan cake mix
- 1 cup flaked coconut
- 1/2 cup chopped pecans
- 1/2 cup butter, melted
- Vanilla (or butter pecan) ice cream, optional

Preparation
Step 1
In a large saucepan, combine the rhubarb, sugar, water and food coloring. Cook over medium heat for 8-10 minutes or until rhubarb is tender; cool slightly. Transfer to a greased 9x13 baking dish, sprinkle with cake mix. top with coconut and pecans. Drizzle with butter.
Bake at 350 degrees for25-30 minutes or until a toothpick inserted near center comes out clean.
Serve with ice cream if desired.
