Don’t Let Fish Intimidate You – Take Control & Celebrate!!

Ever glanced through the meat display at your grocery store and found a pair of eyes (much like the ones pictured) staring back at you? I know. The thought alone of cooking fish can be overwhelming, but don’t let those bright eyes intimidate you. Nothing could be easier than my simple yet delicious broiled fish recipe.

Ingredients

  • 1/2 1/2 1/2 cup fine bread crumbs
  • 2 2 3 – 3 tbsp seafood seasoning (I use Grill Mates)
  • 1/2 1/2 1/2 cup grated Parmesan cheese

Step 1

Dredge your fillets, one at a time, in the egg mixture. Then, cover both sides with the your coating mixture, and transfer them to your aluminum covered cooking sheet. Broil your fish approximately eight minutes on each side. As you can see below, your fish will be slightly crispy outside (Who says you have to fry fish in order to get a good crisp?!), fragile and perfectly moist inside when finished. In my husband’s words, “Now, that’s what I’m talkin’ about!”

If you have any left overs, simply wrap them in the aluminum foil you used to cover the pan, and place them in the refrigerator. And, when you’re ready to enjoy them, unwrap and rewarm ‘em in the oven for a few minutes on 200 – 250 (to keep the crispy texture)!
