New Year's day Bean Soup

Ingredients
- 2 c dried beans in various combination of black-eyed peas, Great Northern beans, kidney beans, lentils, lima beans, navy beans, pinto beans, split peas and a touch of barley
- 2 qts of water plus soaking water
- 2 T salt, optional
- 1 meaty
- ham hock
- 1-28 oz jar or can of tomatoes
- 2 medium onions, chopped or quartered
- 2 T lemon juice
- 1 1/2 tsp chili powder
- 1 tsp pepper

Preparation
Step 1
Wash beans and place in large, covered pot. Cover with water and add salt. Soak overnight. In the morning, drain the beans and add 2 quarts of water and ham hock. Bring to a boil and simmer slowly, covered, for 3 hours. Cut ham off bone. Return the meat to the pot. Add tomatoes and juice, onions, lemon juice, chili powder and pepper. Simmer 30 minutes. Serves 6.
