  • Unsalted butter for preparing baking sheet
  • 1 large egg white
  • 1 tablespoon water
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 1 pound pecan halves

Step 1

Preheat oven to 225. Lightly butter a rimmed baking sheet.

In small bowl, whip egg white and water until the mixture is completely foamy and no liquid remains.

In separate bowl, stir together the sugar, cinnamon and salt.

Add the pecans to the egg white mixture and toss gently to coat. Sprinkle the sugar-cinnamon mixture over the nuts and stir to combine evenly. Scatter the pecans on the prepared cooking sheet, arranging them in a single layer.

Bake the pecans, stirring them with a spatula every 15 minutes or so, until they are a rich brown and nicely glazed, about one hour. Remove from the oven and, using spatula, transfer them to a large platter, arranging them in one layer to cool.

Serve the pecans warm or let cool completely and store in a covered container for up to three days at room temperature.
