Ingredients
- 4 lg. boneless, skinless chicken breasts, cut in thirds
- 1 1/2 bags of reduced-fat Ritz crackers
- 2 tsp. garlic powder
- 1 tsp. cayenne pepper
- 2 eggs, beaten (or equivalent Egg Beaters)
- cooking spray

Directions
Process Ritz crackers in food processor until you have fine crumbs. Stir in garlic powder and cayenne. Put crumbs into pie plate. Preheat oven to 375 degrees. Put chicken pieces into large plastic Ziploc bag and add egg. Shake to coat chicken. With fork, remove chicken a piece at a time and dredge in crumbs. Coat cookie sheet or baking pan with cooking spray. Place coated chicken pieces on pan. Bake for approximately 40 minutes, turning halfway through.
