BROCCOLI CASSEROLE

My mother prepared this casserole for holidays and Sunday dinner. The cheese goes so well with the broccoli.

Ingredients
- 2 pkgs. frozen broccoli spears, cooked & chopped
- 1 can cream of mushroom soup
- 1 Tbsp. chopped onion (optional)
- 2 eggs, lightly beaten
- 1 cup shredded cheese
- 1/4 cup mayonnaise
- 1 cup Pepperidge Farm stuffing mix OR
- 1 cup crushed cracker crumbs OR 1 cup grated cheese
- 1/2 stick melted margarine

Preparation
Step 1
Mix together the broccoli spears, soup, eggs, mayonnaise, onion and cheese; put into a greased 2-qt. baking dish. Top with stuffing mix or cracker crumbs mixed with melted margarine or butter OR top with grated cheese. Bake at 350 degrees F. for 45 minutes to one hour.
Note: Similar recipes use up to 1 cup mayonnaise so amount may need to be adjusted to suit your taste.
