Portuguese Caldo Verde

Ingredients
- 1/2 lb Chorizo or linguica, sliced
- 2 Tbs Olive Oil
- 1 Large sweet parish onion, sliced
- 6 Large all purpose potatoes, peeled and sliced
- 6 cups water
- 1/2 lb kale or swiss chard
- 1 to 1 1/2 tsp salt
- 1/4 tsp pepper

Step 1
In 5 quart dutch oven, cook chorizo (linguica) slices over low heat, stirring frequently, until they are lightly browned and most of the fat has cooked out. Spoon sausages into bowl. Add oil and onion to same pan; cook 15 to 20 minutes over medium heat until onion id golden and tender, stirring occasionally.
Add potatoes and sauté for 2 minutes to coat with oil. Add water. Cover and heat to boiling over high heat. Reduce heat to low and simmer soup for 1 hour, stirring occasionally, until potatoes dissolve to thicken the soup.
Meanwhile, rinse and drain kale, Trim off coarse stems. Stack about 6 green leaves at a time and cut leaves crosswise into paper thin slices. Add kale, chorizo (linguica), 1 tsp salt and the pepper to the soup. Cook 5 minutes longer, or until greens are tender, Taste and add more salt if needed.
