Ingredients

  • 1 lb almond paste (Solo 2- 8oz cans pure almond paste gold label)
  • 1 cup sugar
  • 3 egg whites (beaten with whisk till foamy white)
  • 2-3 cups of pignoli nuts (as needed)

Preparation

Step 1

Directions:
Granulate sugar and paste together in food processor (until loose and sugary consistency, do a little at a time)
Fold in beaten egg whites with fork.
Form small balls (round) and roll into nuts
Place on parchment lined cookie sheets

Bake in oven at 350 until golden brown- 22 minutes

** 1 layer in over at a time
** take little bowl with cold water to dip fingers in because it’s sticky
** put pignoli nuts on table on parchment paper.

Serves: 30-32 cookies
