Ingredients
- 1 (18 ounce) boxes yellow cake mix
- 1 (4 ounce) boxes coconut cream pudding mix
- 4 eggs
- 1 1/3 cups water
- 1/4 cup oil
- 1 1/3 cups coconut
- 1 cup chopped pecans

Step 1
Preheat oven to 350 degrees. Grease and flour three 9-inch round cake pans.
With a mixer on low, blend together cake mix, pudding, eggs, oil, and water.
When blended, beat for 4 minutes. Fold in coconut and nuts.
Divide batter between 3 cake pans. Bake for 35 minutes or a toothpick comes out clean.
Ice with cream cheese icing.

Wow! This was great! The pudding inside the batter made it so moist and coconut-ty. To help in the calorie department I used whip cream as icing. It was perfect for a warm summer night!
A delicous, moist cake that I'm going to rate without stars because of changes. Didn't have pudding mix so subbed cornstarch and used coconut milk for the liquid. We'll be making this one again.

Good grief this is good! One thing I was unsure about was if the pudding mix was "instant" or not. Since that was all I could find, I used the instant and it was soooooo good! Apparently the bag boy at the grocery negelected to put the pecans in my bag too, so I was forced to make it without the pecans, but frankly they were never missed! Anyone out there who knows someone who likes coconut cream pie will find they will fall in love with this cake. I don't particulary like pie but I think I'm in love with this cake!
One of THE BEST cakes I've EVER made!!!!!!!!!!!!!!!!! I could only do 2 layers though, that was all the pans I had, but it turned out PERFECT!!!!!!!!! I was DYIN' smelling it while it was baking, OMG, I KNEW it was going to be FANTASTIC...and yep...IT WAS!!!!!! Thanks so much for sharing such a wonderful recipe!!!!!! I'll be making this cake a lot!!!!!!! :) This is truely BAKERY QUALITY!!!!!! :)
