Ingredients

  • 3 medium sweet potatoes; peeled, 1 inch chunks
  • 3/4 cup light brown sugar; lightly packed
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 Tbs Molasses
  • 2/3 cup half-and-half
  • 1/3 cup dry sherry
  • 2 eggs
  • 1 9 inch pie shelll; partially baked and cool

Step 1

Preheat the oven to 450 degrees. Put the sweet potatoes into a steamer basket and steam about 20-25 minutes or until very tender. Spoon into bowl and mash (or use electric mixer) until completely smooth. Stir or beat in brown sugar, cinnamon, nutmeg, salt, molasses, half-and-half, sherry and eggs. Pour into partially baked pie shell and place in preheated oven. Immediately reduce the heat to 375 degrees and bake approximately 35 minutes or until pie is set in middle. May be served warm or cold with sweetened whipped cream, if desired.

NOTE: To partially bake pie shell, prick bottom of shell and place in preheatedm 425 degree oven for 7 minutes. Remove and cool on rack.
