Pan Haggety is wonderfully filling and warming. It can be eaten as a main meal or a starter, just alter the amounts of ingredients according to how much you want to make, and keep the proportions roughly the same. Not by any means cordon bleu but tasty.

Finely grate the potatoes, onion, tomatoes and cheese seperately. Using a non stick frying pan melt a knob of butter then place a layer of potato, followed by onion, then tomatoes and finally cheese. Cover and cook on low heat for 30/40 minutes.
