PEACH CHUTNEY
Burnt-orage in color, this has a slight ginger flavor. Good with pork, and even over cream cheese served with crackers.

Ingredients
- 8 cups peeled and sliced peaches
- 2 cups cider vinegar
- 3 cups granulated sugar
- 1 medium onion, finely chopped
- 1 cup raisins
- 1/4 cup chopped candied ginger
- 1 garlic clove, minced
- 2 tsp salt
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper (optional)

Step 1
Measure all ingredients into large pot. Stir over medium heat until sugar dissolves. Bring to a boil, stirring frequently for 45 to 55 minutes until thickened. Stir more often end of cooking time so as not to scorch. Pour into hot sterilized jars to within 1/4 inch of top. Seal.
