Ingredients

  • 4 cups evaporated milk
  • 3/4 cup whole milk
  • 1 egg
  • 1/2 tsp vanilla extract
  • Dash of salt and pepper
  • 4 dozen freshly shucked clams
  • 1/2 cup cake flour
  • 1 1/2 cups yellow cornmeal
  • Oil for frying

Step 1

Combine evaporated and whole milk, egg, vanilla, salt and pepper. In a separate bowl, combine flour and cornmeal. Soak the clams in the milk mixture, then dredge them in the cornmeal mixture, fluffing them in for a light but thorough coverage.

Shake off the excess coating.

Heat the oil to 350 to 375 degrees. Fry the clams until golden brown and crisp, about 5 minutes. (Do not crowd the clams in the oil; fry in batches if necessary).

Drain on paper towel, salt to taste, and serve immediately, accompanied by french fries, onion rings and coleslaw.
