Sour Dough Bread

Using a sourdough starter is an ancient method of beginning to make a leavened bread. The starter consists of small amounts of some of the basic bread ingredients, such as flour, water, milk and, in this recipe, yogurt. This mixture is left out to attract wild yeasts from the air. The yeasts feed on the starch in the flour, resulting in the fermentation and souring of the mixture and creating a base to which additional ingredients can be added to make a dough. The starter may be left to develop for many days, depending on the desired degree of sourness.

Ingredients

  • STARTER:
  • 3/4 Cup sugar
  • 3 Tbsp. Instant potatoes
  • 1 cup warm water
  • ............................
  • BREAD:
  • 6 cups flour
  • 1/3 cup sugar
  • 1 tsp salt
  • 1/2 cup oil
  • 1 1/2 cups warm water
  • 1 cup starter (above)

Preparation

Step 1

To make Starter:

Mix together 1st step and add to starter. Leave out of refrigerator uncovered for 8-12 hours. when bubbly take out one cup. This is your "starter."

To make Bread:

In a large mixing bowl make a stiff batter with ingredients for bread. Knead lightly after mixing, grease bowl. Put dough in bowl and turn over, cover with cloth and let rise overnight.

The next morning punch down and knead a little. Divide into three parts, knead each part 8-10 times. Shape each into a loaf or rolls and place in greased pan, cover and let rise all day.

Bake in oven at 350 degrees for 30-35 minutes. Dough can also be used for pizza crust or cinnamon rolls.
