Ingredients

  • CAKE:
  • 3 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 3 tsp cinnamon
  • 1 tsp baking soda
  • 3/4 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 cup butter, melted
  • 3/4 cup vegetable oil
  • 3 eggs
  • 3 tsp vanilla or almond extract
  • 4 cups apples, peeled and diced
  • 1/2 cup pecans

  • CARAMEL SAUCE:
  • 1/4 cup butter
  • 1 cup packed brown sugar
  • 3/4 cup whipping cream

Preparation

Step 1

In a large mixing bowl, combine flour, sugars, cinnamon, baking soda, nutmeg, and salt.

In a separate bowl, combine melted butter, oil, eggs, and extract. Stir wet ingredients into dry ingredients until just combined. Fold in apples and pecans.

Spoon batter into a greased and floured bundt pan and bake in a 325F oven for 1 hour or until a toothpick inserted in the centre comes out clean.

Cool in pan for approximately 15 minutes, unmold and cool on rack.


To make caramel sauce:
Melt butter and sugar over medium heat stirring for about 5 minutes until the sugar is dissolved. Add the cream, stirring as you bring to a boil. Simmer until the mixture is slightly reduced and thickened, about 10 minutes. Slice cake and serve with warm caramel sauce and vanilla ice cream.
