Ingredients

  • 4 TBL unsalted butter
  • 1 pound boneless chicken breasts< cutin to 1/4 inch strips
  • 1 small onion 2/3 cup
  • table salt
  • 6 cloves of garlic put through press or chopped
  • 2 tsp fresh thyme
  • 1/4 tsp red pepper flakes
  • 2 tsp flour
  • 1 cup dry white wine
  • 2 cups low salt chicken broth
  • 1 bunch broccoli (1 1/2 pounds)trinned into florets about 6 cups
  • 1/2 pound penne, cavatappi, or campanelle
  • 2 oz or 1 cup asiago or parmesian
  • 1 jar oil packed sun dried tomatoes 7 to 8 1/2 ounces rinsed patted dry and cut into 1/4 inch strips
  • 1 TBL parsley
  • blk pepper

Preparation

Step 1

Bring 4 qts of water to a boil covered
Heat 1 TBL butter in skillet over high heat, until just beginning to brown (1 min)
Add chicken in a single layer
Cook for 1 min without stirring
Str and continie to cook for another 2 min. Chicken will be a little pink. Transfer to a clean bowl

Return skillet to high heat, add 1 TBL butter,add onion< 1/4 tsp salt, and cook until browner around edges around 2 - 3 min
Stir in garlic, red pepper flakes, thyme and flour, cook stirring constantly about 30 seconds. Add wine and chicken broth, bring to a simmer and lower to medium, and simmer stirring occasionally until sauce has thickened slightlyand reduced to 1 1/4 cups, about 15 min
While sauce simmers add slat to water and add broccolli, cook around 2 min and take out with slotted spoon to paper toweled plate
cook pasta a la dente saving 1 cup of the water
Drain and return pasta to pat
Addin 2 TBL butter, cheese, parsley,sun dried tomatoes and chicken into sauce, stir until chicken is hot. Salt and pepper
add all to pasta includding Broccolli
toss adding water to make consistency right
