Ingredients
- 4 salmon fillets (6 ounces each) 1 1/4 inches thick
- Salt and pepper
- 1 TB vegetable oil
- Lemon or lime wedges (for serving)

Step 1
1. Following the photos, remove any pin bones from the salmon. Pat the salmon dry with paper towels, then season with salt and pepper
2. Heat the oil in a 12 inch nonstick skillet over medium-high heat until just smoking. Gently lay the salmon skin-side up in the skillet and cook until well browned, about 5 minutes.
3. Gently flip the fish skin-side down and continue to cook until all but the very center of the fish has turned from translucent to opaque, about 3 minutes. Serve with lemon wedges.
