Ingredients
- 8 oz. penne pasta
- 1/2 cup light mayonnaise
- 1/4 cup low-fat plain yogurt
- 1/4- 1/2 cup honey mustard
- (1 tablespoons fresh lemon juice)
- 1 clove garlic minced
- 4 Granny Smith apples, cored, cut into 1/2-inch cubes
- 1 cup very thinly sliced celery
- 2 TB Red Onion, thinly sliced, chopped
- 1/2 cup walnuts

Preparation
Step 1
Bring large pot of lightly salted water to a boil. Add pasta and cook until tender but still firm to the bite (approx 8-10 mins).
Meanwhile toast walnut pieces on baking sheet in oven preheated at 350 degrees, for 8-10 minutes.
Drain pasta and run under cold water.
Core and dice apples, then place in bowl and drizzle with lemon juice. Mix together pasta, celery, apples, and walnuts and toss with mayo, yogurt and garlic.
Salt & pepper to taste.
