Ingredients
- 1 1/2 c bulgar wheat
- 7 c boiling water
- 1 c parsley, chopped
- 1/4 c fresh mint, minced
- 1/4 c green onions, chopped
- 3 T bell pepper, chopped
- 2 tomatoes, peeled & chopped
- 1/2 c lemon juice
- 1/4 c OO
- 2 T salt
- Grd pepper to taste

Preparation
Step 1
Put wheat in bowl; pour water over; cover; let stand several hours or overnight until water is absorbed & wheat is tender & fluffy
Put in strainer; shake off excess water
Stir in vegetables & mint
Mix lemon juice, oil, salt & Pepper; mix with wheat mix
Serve cold
