Ingredients

  • 2 lbs cod or other firm fish fillets, fresh or frozen
  • 2 tsp salt
  • 1/4 cup butter or margarine
  • 1/2 cup chopped onion
  • 1/4 cup flour
  • 2 cups milk
  • 1 whole clove
  • 1/2 cup shredded cheddar cheese
  • chopped parsley optional

Preparation

Step 1

Thaw frozen fish. Arrange fish fillets in shallow 2 quart casserole. Sprinkle 1 tsp salt over fish. Melt butter or margarine in saucepan, add onion and cook until tender. Stir in flour and remaining 1 tsp salt. Add milk and whole clove; cook stirring constantly until thickened. Pour over fish. Sprinkle with cheese. Bake in a moderate oven, 350 degrees for 20 to 25 minutes or until fish flakes easily when tested with a fork. Sprinkle with chopped parsley just before serving, if desired.
