Ingredients
- 4 lbs lean stew meat
- 4 c beef broth
- Salt, pepper and garlic
- 4 medium potatoes, cubed
- 1 regular-size bag baby carrots, cut into bite-size
- 1 can butter beans, drained
- 1 can lima beans, drained
- 1 can corn, drained
- 1 medium onion, diced
- 1 can green beans, drained
- 1 c V-8 or tomato juice
- Salt and pepper

Step 1
Cook the stew meat, beef broth, salt, pepper and garlic in the crock pot. Then refrigerate overnight. Tear the meat apart a little. Add all the ingredients to crock pot and stir well. This makes a very full pot and can be hard to stir so I take some of the meat out and then try to add veggies, little by little in layers. Cook on high until through and then turn to low and cook all day. May need to add more broth.
