Ingredients

  • 32 oz beef or chicken broth or combination of both
  • 1 block firm tofu, cut into small cubes
  • 1 can bamboo shoots
  • 1 pkg sliced mushrooms
  • 4 green onions, thinly sliced (green part only)
  • 3 T rice vine vinegar
  • 2 T soy sauce
  • 1/4 c water
  • 2 T cornstarch
  • 2 tsp white pepper
  • 2 tsp sesame oil
  • 2 eggs, lightly beaten

Preparation

Step 1

Put broth, bamboo shoots, mushrooms and scallions in a large pot and bring to a boil. Add tofu, vinegar, pepper and soy sauce. Mix cornstarch and water and add to soup. When thick and clear, add eggs, dripping in a stream and stirring constantly until done. add sesame oil and serve.
