Oops! Forgot to mention, I, too, cooked the bacon in the microwave and it worked beautifully. For the person who thought this recipe was tasteless, perhaps, using the basil pesto would give it more flavor for you. Still, we think it a wonderful recipe!
This is one of our favorite chicken recipes. I've made it four times now. The first time I didn't have fresh basil, but do keep basil pesto in the freezer. I eliminated the olive oil and spread a couple tablespoons of pesto over the chicken then added the tomato slices and bacon. It was delicious. The last time, I was out of tomatoes and used some drained canned tomato chunks, not as good, but worked. I also split our chicken breasts in half horizontaly for the two of us so the baking time is cut to 15 to 20 minutes. This recipe is so versatile, easy and delicious, no wonder it is Contest Winning!
Very good and easy to make...one thing though, I cooked the bacon in the microwave and I think turkey bacon would probably be a great alternative.. even my picky kids liked it.
This was delicious and beautiful! Be careful not to overcook the bacon. Hubby doesn't care for tomatoes, so I left them off of his serving.
Only problem of the 'Five Star' system .. is thee should be a '6th Star.' This would get one.
I'm about 2 years late in reviewing this recipe. I first made it when I was 'Mommy sitting' my 90+ y.o. Mom. I made it as is, but inserted some garlic and added Italian seasoning along with the salt and pepper. I served it with hot buttered noodles. Mom started eating the noodles while I cut up some of the chicken for her. She then took a piece of chicken and she totally ignored the noodles, which she loves! So seldom have I seen her concentrate on only one item of food, but she did with this. She finally looked at me and said, "I can't eat any more!" We had the 're-dos', cold, for lunch the next day and the were amazing cold also!
I've made this 'several many' times, and for Mom too, and I still totally enjoy it. It's a recipe that cannot be ignored - repeat, repeat, repeat!! TEN STARS!!!
GREAT RECIPE!! Made couple cuts in chicken breasts. And rubbed some garlic on chicken as well. Taste & Smell & presentation is all there!!
Delicious and easy! We serve with a side of salad.
Delicious! So fast & easy to make!
I was surprised at how tasty this was. And it was easy.
Excellent flavor, quick and easy. Impress your friends with the ease of preparation and wonderful aroma.
I used boneless skinless thighs. Didn't have tomatoes so I used a can of diced garlic, basil roasted tomatoes and just omitted adding any more basil with the salt and pepper. Soooo delicious!! Family says it's a keeper and it was so easy to make.
Tastes and looks great! I make this for company and always get favorable reviews.
So easy and good. Both kids (5 & 7) ate it although we just omitted the tomato for one of them. Wouldn't change a thing.
Well received by kids and adults alike!
This tastes delicious and looks even more delicious! I used pre-cooked bacon.
Really good. I used fillets instead of chicken breasts, so I used the lower cooking time. Easy and relatively healthy if you cut the bacon to 1 slice per chicken breast. Definitely a keeper in this house. Also would make a yummy sandwich.
Easy, elegant, delicious. I flattened the chicken breasts out a little bit so they cooked quickly and were more flavorful throughout.
