  • 1 pound 95% lean ground beef
  • 1/2 cup chopped onion
  • 1 cup plain dried breadcrumbs
  • 1 egg, lightly beaten
  • 1/3 plus 1/4 cup barbecue sauce, divided
  • Aluminum foil
  • Vegetable cooking spray

Preparation

Step 1

In a large bowl, combine ground beef, onion, breadcrumbs, egg and 1/3 cup of barbecue sauce; shape into a loaf. Wrap in aluminum foil coated with cooking spray and chill for 15 minutes in the freezer. Meanwhile, preheat grill to medium-high heat. Poke fork-size holes in both sides of foil wrap. Grill meatloaf in foil package, covered with grill lid, for 10 to 15 minutes per side or until a meat thermometer inserted into the thickest portion registers 155 degrees. Open the foil and spoon remaining 1/4 cup of barbecue sauce over the meatloaf. Cover with aluminum foil for 5 to 10 minutes to heat through. Serve immediately.

SERVING SUGGESTION: Steamed green beans and baked sweet potatoes (nuke them in the microwave if you like, to keep your kitchen cool.
