Ingredients

  • 3 T oil
  • 1 cup uncooked long-grain rice
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 cup salsa
  • 2 cups chicken broth

Preparation

Step 1

Heat oil in large saucepan over medium heat and add green pepper, onion and garlic to soften. Add rice and cook, stirring constantly, until golden. Sprinkle with salt and cumin.

Stir in tomato sauce and chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes until liquid is absorbed.

Put in baking dish and pour a little chicken broth over the top. Cover with foil and put in 350 oven for awhile until ready to serve.
