Ingredients

  • 4 bell peppers - small to medium
  • 1 lb. lean ground beef
  • 1 onion, chopped
  • 1/2 bag Uncle Ben's ready rice, cooked 90 secs.
  • 1 can tomato sauce, I used the roasted garlic flavor
  • 1/4 lb fresh, chopped mushrooms
  • 1/4 t. salt & pepper
  • 1 t. Moroccan seasoning, or oregano, marjoram & thyme
  • 1/2 c shredded cheese, cheddar, mozzarella, etc.

Preparation

Step 1

Wash & core peppers, place in 8" square baking pan coated with nonstick spray. Cook beef and onion until beef is browned, add mushrooms, spices, rice and cheese. Stir in tomato sauce. Stuff beef mixture in peppers. Pour in boiling water to cover bottom of dish. Bake at 350 or until peppers are tender, about 30-40 minutes.
