Ingredients
- 6 c spinach leaves
- 2 c fresh basil
- 1/2 c OO
- 2 cloves garlic, minced
- 1/2 c pine nuts
- 4 oz prosciutto, chopped
- Salt & pepper to taste
- 3/4 c grated Parmesan cheese
Preparation
Step 1
Combine spinach & basil in large salad bowl
Heat OO in a skillet over med heat
Add garlic & nuts; mix well
Sauté until musts are brown
Add prosciutto; mix well
Cook just until heated through, stirring constantly
Pour over spinach mix, tossing to coat
Season with S & P
Sprinkle with Parmesan cheese
