This week’s recipe is sure to accomplish any of these scenarios ~ using these simple ingredients!

I came across this recipe about fifteen years ago. Ever since, it has been a family favorite and is found on our dinner table at least once a month. I made the dish one evening while dating Jason (my now husband). He took a huge helping, thinking it was potato casserole. After trying his first bite, he was shocked by the mixed flavors of this simple dish. Pleasing to the palette, you will find a hint of salty mixed with the sweetness of the pineapple.


MY NOTES - Cut this recipe in half and bake it in an 8" square pan.The pineapple seems to taste better when each chunk is cut into 4 smaller pieces.

Pineapple Cheese Casserole 1 Picture

Ingredients

  • 2 20 oz cans chunk pineapple in juice, drained (save juice)
  • 2 cups grated cheddar cheese
  • 1/2 cup crushed Ritz crackers
  • 1/2 cup sugar
  • 6 Tbsp self-rising flour
  • 1 stick butter or margerine, melted

Details

Preparation

Step 1

Mix pineapple, cheese, sugar and flour.

Pour into 13"x9" baking pan.

Mix crushed Ritz crackers with the melted butter.

Sprinkle on top of casserole.

Bake at 350 degrees for 30-40 minutes.
